Mutton Harees Recipe

Here is a step-by-step recipe for Mutton Harees:

1- Soak the Wheat:

Soak the wheat for 6-7 hours or overnight to soften it and make it easy to cook. If you are in a hurry and do not want to soak longer, use cracked or pre-soaked wheat readily available in the market.

2- Prepare Mutton:

Add olive oil or seman (purified Butter) to a pot and sear the Mutton on medium heat until golden brown. These steps help lock in the Mutton’s original flavor. After it turns golden brown, set it aside.

3- Saute Spices:

  • In the same pot, add 1 tbsp of oil. After 1 minute, add ginger-garlic paste and saute it for 2-3 minutes until fragrant.
  • Now add all spices mentioned above and saute for 3-4 minutes until all spices release their taste.

4- Add Mutton and Wheat:

  • Add the Mutton and soaked wheat to the same pot of spices and mix well until the Mutton, spices, and wheat are well combined.
  • Add 6-7 cups of water and bring it to a boil.

5- Cook Slowly and Keep Stirring:

  • Once the mixtures start boiling, reduce the heat and cover the pot. Keep stirring and simmering so that the mixture doesn’t stick to the bottom.
  • Cook until the wheat and Mutton are well combined. The meat will become tender, and the grain will start breaking down.
  • Slow-cook it until it becomes creamy and porridge-like.

6-  Serve:

Once you get the desired consistency of the mutton harees, turn off the flame, add saman and lemon juice, and serve hot.
